I can highly recommend "Legion Condor" by Ries and Ring (Schiffer Publications). It focusses exclusively on the Luftwaffe involvement but the production quality and variety of photos are peerless.

Homage to Catalonia, George Orwell's memoir of fighting for the Republicans with Trotskyite militia POUM, and his realization of the dangerous hypocrisy and duplicity of the Stalinists. I dont remember if it had any maps, it might depend on the edition.

This is a good account of the aircraft used in the conflict. Has a few errors, but a lot of research has gone into it.
